Hela bay leaves contain a high proportion of essential oils. The intense aroma associated with this makes them so popular in hearty cuisine. Originally the laurel tree comes from Central Asia, but today it can be found especially in the Mediterranean region. In hearty soups and stews, sauerkraut, or in aromatic game dishes, laurel is a must. Put the whole bay leaves into a pot or frying pan and let them boil or stew along. Then simply remove the leaves before serving. The aroma also develops particularly well when the leaves are scratched briefly before cooking. Not to forget, bay leaves are of course indispensable with pickled vegetables or herring.
